Using this recipe you can make rolls or cookies different shapes.

Instructions:

  1. Add soft butter, cottage cheese, egg, sifted flour and baking powder in a bowl.cottage cheese eggs flour baking powder
  2. Mix all together with a spoon.
  3. Knead the dough. If needed, you can add more flour until the dough does not stick to the hands.
  4. Divide the dough into 2 or 3 equal portions, wrap in plastic and place the bowl in a fridge for 30 minutes or until firm.cottage cheese ball
  5. Remove the dough from the fridge.
  6. Lightly flour a surface. Then roll each dough portions to a thickness of a 3 mm (1/8″).
  7. Make cottage cheese cookies:
    • Cut out circles around 5 cm (2″) in diameter or any other preferable size using a cup, glass or circle cookies cutter.cottage cheese cookies circles
    • Dip one side of the circle in sugar, fold over in half with sugar inside.cottage cheese cookies circle

    • Place on baking sheet with sugared side up. Repeat with the rest dough.
  8. Make cottage cheese roll:
    • Cut a long triangle.cut triangle

    • Roll each triangle starting at the widest part and place each crescent on a baking sheet, seam side down.cottage cheese roll
  9. Bake at 200℃ (390℉) or until golden brown on the edges.
  10. Let the cookies cool down for a few minutes, then transfer them to a plate.
