Using this recipe you can make rolls or cookies different shapes.
Instructions:
- Add soft butter, cottage cheese, egg, sifted flour and baking powder in a bowl.
- Mix all together with a spoon.
- Knead the dough. If needed, you can add more flour until the dough does not stick to the hands.
- Divide the dough into 2 or 3 equal portions, wrap in plastic and place the bowl in a fridge for 30 minutes or until firm.
- Remove the dough from the fridge.
- Lightly flour a surface. Then roll each dough portions to a thickness of a 3 mm (1/8″).
- Make cottage cheese cookies:
- Cut out circles around 5 cm (2″) in diameter or any other preferable size using a cup, glass or circle cookies cutter.
- Dip one side of the circle in sugar, fold over in half with sugar inside.
- Then dip one side in sugar and fold over again.
- Dip top side in sugar.
- Place on baking sheet with sugared side up. Repeat with the rest dough.
- Make cottage cheese roll:
- Cut a long triangle.
- Dip one side of the triangle in sugar.
- Roll each triangle starting at the widest part and place each crescent on a baking sheet, seam side down.
- Bake at 200℃ (390℉) or until golden brown on the edges.
- Let the cookies cool down for a few minutes, then transfer them to a plate.
