Zucchini Pancakes with Garlic

  1. Grate zucchini using large holes of cheese grater and place in a bowl.grated zucchini
  2. Add ground flaxseed and eggs to the bowl. Season with turmeric, garlic powder, salt and dried basil.
  3. Mix well using a spatula. Let the batter rest for 5 minutes.
  4. Add coconut flour to the batter. Mix well and leave for another 5 minutes.
  5. Chop garlic clove and put in the mortar. It facilitates process. Use the pestle to smash garlic. It takes a few minutes. Add salt and olive oil in the mortar and stir with garlic to form emulsion.smashed garlic with salt and olive oil
  6. Heat a large skillet over medium heat and spread olive oil.
  7. Add a tablespoon of the batter on the well-heated skillet. Cook around 2-3 minutes on each side or until the side becomes golden brown. Set aside. Repeat it until the batter is done. If you need, spread more oil on the skillet before adding new batter.
  8. Spread smashed oiled garlic using a spoon over the pancakes.
