Instructions:
- Rinse liver with cold water. Slice the liver.
- Place sliced liver in a dip bowl and completely cover with milk for 30 – 45 minutes. It will help remove the bitter flavor from the liver, softens flavor and tenderizes the liver.
- Dice onion.
- Heat a large skillet over medium-heat until hot. Add lard and diced onion. Fry until onion is golden brown. Remove caramelized onion from the skillet and set aside.
- Remove sliced liver from from milk and discard liquid.
- In a bowl, combine flour, garlic powder, salt and black pepper.
- Evenly dust each piece of sliced liver with seasoned flour mixture.
- Place dusted sliced liver on preheated skillet with lard.
- Fry 3 to 4 minutes on each side until evenly browned.
- Serve liver with onion.
